Mad Cow triggers when Brint puts on the armor found in the Harvest Valley Hollow. If left unattended, the armor transforms him into Brienne, unlocking new content but locking the player out of Brint's content forever.
This quest has a non-obvious failure trigger. If the Champion enters the Khor'minos Outskirts before completing the quest (even if it is in-progress), the quest ends, whether or not Brint is in the Champion's party. If Brint is mid-quest upon entering the Khor'minos Outskirts, the armor falls off, negating the transformation; if Brint has never put the armor on, the hollow in Harvest Valley caves in and the armor becomes inaccessible.

Acquisition Conditions
The quest is acquired if Brint equips the armor found in the Harvest Valley Hollow.
Once the Champion enters the Khor'minos Outskirts, the hollow collapses, rendering the armor and the quest inaccessible. If currently active, the quest will end prematurely with no changes to Brint. See Quest State 5.

Quick Summary

Detailed Summary
Acquisition
The Harvest Valley Hollow
When exploring Harvest Valley on the path to the northwest of the Marefolk Village, the Champion can find a large cliff with lush greenery hanging from its edge. The Champion notices that something is off: the roots hang perfectly down. The Champion can Investigate and enter the hollow hidden behind the greenery if any of the following conditions are met:
- Brint is in the party, giving the Champion a boost up;
- The Champion has an Agility range of at least 50%, allowing the Champion to acrobatically climb up;
- The Champion has Camping Supplies, allowing the champion to scale the cliff.
Once inside, the Champion notices a faint glowing on the cave walls from a series of inscribed runes in an unknown script. If the Champion is a Mage, they note the presence of passive magic within the area; if not, and Cait is in the party, she does. The Champion makes their way to a darkened room deep in the cave, which the Champion can enter or not.
If the Champion enters the cave, more wall runes flare, illuminating a large mannequin wearing a set of ceremonial armor, glowing and covered with additional runes. Party members can be asked if they'd like to try it on; all decline except for Brint, who eyes the armor carefully and states that the armor could fit him. The Champion then has two options:

The quest begins if the Champion selects Brint. If the Champion selects Exit Cave, they can return to the tile, select Hollow and begin the quest unless they have entered the Khor'minos Outskirts. See Quest State 5.
Putting on the Armor
The Champion tells Brint to go ahead, but be careful. Brint inspects the armor and notes that the armor is made of bronze painted gold, and begins to don the armor, which automatically straps itself to him, fitting him perfectly. Despite this strangeness, Brint equips the remaining pieces until only the neck-piece, a solid golden ring, remains. Brint states that he knows how to put it on and pushes the ring against his neck; the ring seems to pass through his body, solidifying on the other side. Brint immediately staggers, but recovers once the party makes their way outside.
Brint's Troubles
Routes
After at least 12 in-game hours, Brint approaches the Champion at the Frost Hound the next time the Champion returns to the inn. He shares two problems he's been having since he put on the armor: he can't remove it, and every time he sleeps, he has strange dreams in which he's a female cowgirl being fucked by himself. The Champion suggests that they ask Brother Sanders if he can help.
The Champion now can take Brint to Brother Sanders to be examined, or wait and see what happens. A hidden third route is also available to Champions who enter the Khor'minos Outskirts.
If the Champion brings Brint to Brother Sanders anytime before Quest State 4, an option to ask about Armor appears in the menu, in addition to his regular options.

If selected, Sanders explains that the armor is severely cursed, and muses that it seems like a depreciated method the marefolk used to handle their stallions as they matured a long time ago; the armor would have completely changed Brint within a matter of days. However, Sanders removes the curse, and the armor falls harmlessly from Brint. Sanders, relieved, says he'd half-expected the magic not to work and asks if Brint is all right, to which Brint gratefully replies that he's fitter than ever. Sanders asks that the situation be kept a secret, and then becomes unavailable for the next six to seven hours to rest.
The quest ends here. See "Wait and See" and "Enter Khor'minos Outskirts" for alternate routes.
Brint's Heat
If the Champion decides not to bring Brint to Brother Sanders, Brint collapses the next time the Champion enters the Frost Hound with Brint in the party after at least two in-game days have passed. It looks like he's somehow gone into heat, panting and unfocused, and leaves the Champion with the following options:

Arona eagerly takes Brint up to her room in the Frost Hound; several hours later, she comes downstairs, smug, satisfied, and smelling of sex. She tells the Champion that Brint was "like a girl:" moaning and begging for it. It occurs to the Champion that the armor may, in fact, be turning Brint into a girl--an idea Arona is deeply into, of course. Brint comes downstairs sometime later, feeling much better and grateful them both. The Champion gets Brint back to their room, where they discover that although they can't remove the armor, it can be adjusted aside as needed. They have two options:

Brint Is Brienne
If the Champion does not ask Brother Sanders to remove the armor, the next time they enter the Frost Hound after two in-game nights AND with Brint in the party, the minotaur collapses. The Champion can enter the Frost Hound without Brint in the party without triggering Brint's collapse; they can visit Brint in the Frost Hound without triggering Brint's collapse; and they can sleep elsewhere without triggering Brint's collapse, so it is possible to 'extend' the time before collapse, however, the end of Mad Cow will take priority over all other Frost Hound scenes if all conditions are met.
The Champion and the other party member, if there is one, drag Brint onto his bed at the Frost Hound, and the Champion stays to monitor the comatose minotaur. Suddenly, the cursed armor glows so brightly that the Champion has to look away. A noise like rattling chains regains their attention, and when the Champion looks back, it's to the armor dissipating into dust and light, leaving Brint quietly unconscious in his regular clothes. After a moment, however, he undergoes a transformation that turns him into a cowgirl. Once the transformation completes, the cowgirl awakens, stating that she had the weirdest dream. The Champion then has two options:
